Banana Energy Cookies with Chia Seeds (Healthy & Easy)

These cookies are packed with fiber and protein from the oats, chia seeds, and nut butter, making them the perfect energy-boosting snack. Bananas provide natural sweetness and potassium, while chia seeds add a nice crunch and are full of omega-3s. They’re also super customizable – feel free to swap in dried fruit, nuts, or seeds for variety!

Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup rolled oats use gluten-free oats if needed
  • 2 tbsp chia seeds
  • ¼ cup almond butter or peanut butter
  • ¼ cup dark chocolate chips optional, for a touch of sweetness
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a medium bowl, mash the ripe bananas with a fork until smooth. You want them to be soft and mushy.
  • Add the almond butter (or peanut butter) and vanilla extract to the mashed bananas. Stir until fully combined.
  • In a separate bowl, mix the rolled oats and chia seeds. add the rolled oats, and chia seeds.
  • Add the wet ingredients to the dry ingredients.
  • If using, fold in the dark chocolate chips for a little sweetness and extra flavor.
  • Use a tablespoon or cookie scoop to portion out the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon, as they won’t spread much while baking.
  • Bake for 10–12 minutes or until the edges are golden brown. The cookies should be firm but chewy.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips for the Perfect Banana Energy Cookies:

  • Storage: Store these cookies in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
  • No added sugar needed: The natural sweetness of the bananas is plenty, but you can add a drizzle of honey or maple syrup if you prefer a sweeter cookie.
  • Make them vegan: Use peanut butter or almond butter that’s free of honey to keep the recipe vegan-friendly.
