Easy Chocolate Chip Cookies Without Eggs

Ingredients
  

  • cup all-purpose flour
  • 1 cup unsalted butter softened (or coconut oil for dairy-free)
  • ½ cup granulated sugar
  • ¾ cup brown sugar (packed)
  • 1 tsp vanilla extract
  • ¼ cup unsweetened applesauce to replace 1 egg
  • 1 tbsp milk dairy or non-dairy
  • ½ tsp baking soda
  • ¼ tsp salt
  • cup chocolate chips (dairy-free if needed)

Instructions
 

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the dairy-free butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes using a hand mixer or stand mixer.
  • Add the applesauce, milk and vanilla extract to the butter and sugar mixture, and beat until fully incorporated.
  • Gradually add the dry ingredients to the wet mixture, stirring until everything is combined. Be careful not to overmix.
  • Gently fold in the dairy-free chocolate chips.
  • Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. You should get about 12-14 cookies, depending on the size.

  • Bake for 8-10 minutes or until the edges of the cookies are golden brown and the centers are set. For softer cookies, bake on the shorter end of the time range.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
