Equipment

  • Large saucepan
  • 8×8-inch baking pan
  • Parchment paper
  • Measuring cups and spoons
  • Heatproof spatula or wooden spoon
  • Microwave-safe bowl
  • Knife for cutting

Ingredients

  • 3 cups Rice Krispies cereal
  • ½ cup unsalted butter
  • 3 cups mini marshmallows
  • ½ cup creamy peanut butter plus an extra 2 tablespoons for the topping
  • ¼ cup unsweetened cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  • Line a 8×8-inch baking pan with parchment paper. This helps with easy removal later.
  • In a large saucepan over low heat, melt the butter.
  • Add the mini marshmallows and stir continuously until completely melted and smooth.
  • Stir in the ½ cup peanut butter and the unsweetened cocoa powder until the mixture is uniformly combined.
  • Remove the saucepan from heat.
  • Immediately pour in the Rice Krispies cereal. Gently fold until every piece is well coated with the chocolate–peanut butter mixture.
  • Transfer the mixture to your prepared pan.
  • Using a spatula or clean hands, press the mixture evenly into the pan to create a firm layer.
  • In a microwave-safe bowl, combine the chocolate chips and the extra 2 tablespoons of peanut butter.
  • Drizzle the melted chocolate-peanut butter topping evenly over the pressed Rice Krispie mixture.
  • For an extra decorative touch, use the back of a spoon to create swirls or patterns.
  • Refrigerate the pan for at least 1 hour to set the squares firmly.
  • Once set, remove the mixture from the pan using the parchment paper.
  • Use a sharp knife to cut into squares. Serve chilled or at room temperature.

Storage & Tips

  • Storage:
Store any leftovers in an airtight container. Keep them in the refrigerator for up to 1 week. If left at room temperature, they’re best enjoyed within 2–3 days.
  • Tips:
    • Even Coating: Make sure to remove the saucepan from the heat before adding the cereal so the coating is even without over-cooking the marshmallows.
    • Gentle Mixing: Fold gently to avoid crushing the cereal, which keeps the squares light and crispy.
    • Parchment Paper: Lining your pan with parchment paper makes for a hassle-free release and cleanup.
    • Custom Swirls: Experiment with different drizzle patterns on the topping for a fun, unique presentation.
    • Microwave Caution: When melting the chocolate-peanut butter topping, heat in short bursts to prevent burning.
