Make this recipe vegan-friendly with a couple of simple substitutions that won’t affect the taste of this creamy corn soup.
Vegetable Broth
Replacing the chicken broth with vegetable broth will not affect the taste or consistency of the corn soup.
Almond or Oat Milk
Replacing the cream with almond or oat milk might affect the consistency of the soup.
Indeed, the soup will be more liquid but no less tasty!

Easy Creamy Corn Soup
Equipment
- 1 Pan
- 1 Blender
Ingredients
- 2 tbsp extra virgin olive oil
- 1 onion
- 2 peeled potatoes cut into cubes
- 5 cups chicken broth
- 4 cups corn kernels (fresh or frozen)
- 1/2 cup 35% cream
- 1 clove garlic minced
- 1 tbsp thyme (fresh or dry)
Instructions
- Heat a medium/large pot over medium heat. Add the olive oil along with the potatoes and onion. Cook until the onion is tender, about 5 minutes. Add the garlic and cook for 30 seconds.
- Pour the in the chicken stock and stir. Add salt and pepper.
- Bring to a boil then cover and reduce to a simmer for 5 minutes.
- Add the corn and cream, covered for 10-15 minutes. Transfer the mixture to a blender and blend until smooth. (You can also use an immersion blender to blend until smooth.)
- Add thyme, salt, and pepper to taste.Bon Appétit!
