Easy Pumpkin Oatmeal Cookies Topped with Cinnamon Icing

Ingredients
  

Pumpkin Oatmeal Cookies

  • cups rolled oats
  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ cup chia seeds (optional)
  • ¼ tsp salt
  • ½ cup (1 stick) unsalted butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 1 egg
  • 1 tsp vanilla extract

Cinnamon Icing

  • 2 cup powdered sugar
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 3-4 tbsp milk (or milk alternatives)

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  • Mix Dry Ingredients: In a medium bowl, whisk together the oats, flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  • Cream Butter and Sugar: In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add Wet Ingredients: Mix in the pumpkin puree, egg, and vanilla extract until fully combined.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  • Scoop the Dough: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  • Bake: Bake the cookies for 15-20 minutes or until the edges are lightly golden but the centers still look slightly soft. They will firm up as they cool.
  • Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Icing: Mix all the ingredients together for 2-3 minutes until well combined and apply on the room temperature pumpkin cookies.
