  • 2 cups all-purpose flour or whole wheat flour
  • 2 tsp baking powder
  • tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ½ cup milk dairy or non-dairy
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 tbsp vanilla extract
  • cup fresh or frozen blueberries do not thaw if using frozen blueberries

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk the applesauce, milk, vegetable oil, eggs, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and gently mix until just combined. Be careful not to overmix, as this can result in dense muffins.
