If you’re searching for a delicious and easy-to-make treat, these Simple Fig Muffins with Cinnamon are the perfect choice! Made with fresh figs, warm cinnamon, and crunchy pecans, these muffins are bursting with flavor in every bite. Whether you’re a seasoned baker or a beginner, this recipe is straightforward and beginner-friendly, ensuring success even if it’s your first time baking muffins.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon optional
  • 1 cup granulated sugar
  • ¼ cup honey
  • ½ cup vegetable oil
  • cup milk milk alternatives works as well!
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh figs, chopped or ¾ cup dried figs, chopped and rehydrated in hot water
  • ½ cup chopped pecans optional

Optional Topping

  • ½ cup crushed pecans

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
    Bowl with flour and other ingredients to make muffins.
  • In another bowl, whisk together the granulated sugar, honey, oil, milk, eggs, and vanilla extract until smooth.

  • Add the wet ingredients to the dry ingredients and gently stir until just combined (don’t overmix).

  • Add the chopped figs and pecans to the batter and gently mix.

  • Divide the batter evenly among the muffin cups, filling each about ¾ full.

  • Add chopped pecans on top (optional)

  • Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
