Sugar-Free Banana Muffins: A Healthy and Delicious Recipe

These Sugar-Free Banana Muffins are the healthy choice! Packed with natural sweetness from ripe bananas, these muffins are soft, fluffy, and totally guilt-free.

Equipment

  • 2 mixing bowls
  • measuring cups
  • spatula

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 4 ripe bananas
  • 1 cup milk (use can also use nut milk)
  • ½ cup vegetable oil
  • 3 eggs room temperature
  • 1 tsp vanilla extract
  • ¼ cup rolled oats for toping (optional)

Instructions
 

  • Pre-heat the oven to 350°F
  • In a mixing bowl, mix the flour, the baking powder, baking soda, cinnamon, and the salt
  • In a second bowl, mix the eggs, vanilla extract, oil, and milk.
  • Puree the bananas and add to the eggs, vanilla extract, oil, and milk.
  • Add the wet ingredients to the dry ingredients and stir well just enough to obtain a homogeneous paste.
  • Oil the muffin tin and pour the batter into it
  • Add rolled oats as topping (optional)
  • Bake for 20 minutes. Remove from the oven and let cool on a wire rack
