Servings 12 muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • tsp baking soda
  • pinch of salt
  • 2 ripe bananas mashed
  • cup vegetable oil
  • ½ cup milk dairy or non-dairy
  • ½ cup granulated sugar
  • 3 eggs room temperature
  • 1 tsbp vanilla extract
  • ½ cup nutella plus extra for topping

Instructions

  • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
  • In a large bowl, whisk together the flour, baking soda, and salt, reserve.
  • Mash the two ripe bananas.
  • In a separate mixing bowl, whisk together the mashed bananas, oil, sugar, eggs, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold 1/2 cup of Nutella into the batter gently to create swirls.
  • Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. Drop a small dollop of Nutella on top of each muffin and use a toothpick to swirl it for a decorative effect.
  • Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Tips for the Best Banana Nutella Muffins

  • Use overripe bananas for extra sweetness and flavor.
  • Warm the Nutella slightly to make it easier to swirl.
  • For added texture, sprinkle chopped hazelnuts or chocolate chips on top before baking.
