- 1½ cup whole wheat flour
- ¾ cup rolled oats
- 1½ tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- ¼ tsp salt
- ¼ cup vegetable oil
- ¾ cup applesauce
- ⅓ cup maple syrup or honey
- 3 eggs room temperature
- 1 tsp vanilla extract
- ½ cup milk milk alternatives works as well!
- 1 cup finely chopped apples
Optional Wholesome Ingredients To Add
- ⅓ cup granola I did put granola in these muffins for extra crunch
- ¼ cup chia seeds
- ¼ cup hemp seeds
Instructions
- Preheat your oven to 375°F and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine rolled oats, flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together applesauce, maple syrup or honey, eggs, milk, vegetable oil and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
- Gently fold in finely chopped apples and any optional add-ins like nuts or raisins or granola.
- Divide the batter evenly among the muffin cups and add finely chopped apples on top for pretty apple muffins!
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
