This recipe makes an amazingly moist and flavourful lemon sweet bread.
Indeed, every bite is filled with lemon flavor since I use lemon juice and lemon zest.

Ingredients You’ll Need To Make This Lemon Cake Bread

Flour

You can use all-purpose white flour for this recipe. I haven’t tried the recipe with whole-wheat flour, but I would stick to white flour for this lemon bread mix.

Softened Butter

It takes between 30 to 60 minutes to soften butter to room temperature depending on its size.
If you only have cold butter and don’t want to wait, here’s a quick tip.
Cut the butter into small pieces and grate them and pound it flat with a rolling pin.

Sugar

White granulated sugar is preferable for this recipe!

Milk 2%

You can 100% replace cow milk with vegetal milk like almond or oat milk. This change will have no impact on the recipe 😊

Lemons

Ingredients
  

  • 1 1/2 cup flour
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 1/2 cup milk 2%
  • 2 lemon (juice and zest)
  • 3 eggs
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Pre-heat the oven at 108° C (350° F)
  • In a mixing bowl, mix the flour, baking powder, and salt
  • In a separate mixing bowl, whip the butter with sugar for 2-3 minutes using an electric whip.
  • Add the eggs, milk, lemon zest, and lemon juice to the butter/sugar and keep whipping.
  • Add the dry ingredients to the wet ones and mix well until you have an even cake mix.
  • Oil your loaf pan and pour the lemon cake mix.
  • Bake in the oven for 50 minutes to an hour or until a toothpick comes out clean.
  • Take out the oven and let it rest to room temperature on a grill before serving.
